Easy Banana Bread Recipe

This Easy Banana Bread Recipe is a family favorite. It won't last long, so you might want to double it!

You'll love this low fat banana bread recipe.

  • 2 large eggs
  • 3 medium mashed bananas
  • 1 tsp baking soda
  • ¼ c margarine (softened)
  • 1 c brown sugar
  • 1 ½ c all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
Preheat oven to 350 F

Beat eggs in a small mixing bowl until frothy.

In a large mixing bowl cream margarine and sugar, add ½ of the eggs. Beat. Add rest of eggs. Beat again.

In a small bowl stir mashed banana and baking soda together. Add to margarine mixture.

Add flour baking powder and salt. Mix well and spoon into loaf pan.

Bake at 350 F for about an hour. Use toothpick to check, if it comes out clean, it is done.

It will also shrink away from the sides.
