Corn Chowder Recipe -Santa Fe Style
If you are looking for a Corn Chowder Recipe with a bit of a kick to it, Santa Fe Corn Chowder should do the trick.
The degree of spice is controlled with the mild, medium or hot italian sausage you select. This makes a great crock pot recipe, just cook approx. 1-2 hours.
You will
need the following ingredients:
- 1/2 lb. italian sausage (medium spice)
- 1 medium onion chopped
- 1 medium green pepper chopped
- 1 litre or 35 oz of chicken broth (Imagine Organic, if you can find it)
- 1 tsp thyme
- 1/4 tsp salt
- 2 cubed potatoes
- 2 c frozen corn (or canned)
- FIRST Remove sausage from casing
- Peel and cube the potatoes
- In a large pot (or pan if using crock pot method), crumble and brown the sausage with onion and green pepper.
- Drain fat if any, (put in crock pot) add broth, thyme and salt.
- Add potatoes and corn then simmer about 15 minutes (1-2 hrs. in crock pot).
- Dissolve 3 tbs of flour in 1 c of mild and stir into soup.
Makes 4-5 servings.
A great recipe tip is to NEVER add flour alone directly to a hot mixture, it will
create lumps.
