- stip of lemon peel (to be removed)
- 1 onion
- 4 carrots
- 4 c chicken broth
- 2 tbsp sugar
- 1/2 tsp curry
- salt and pepper
First saute the onion.
Gradually add other ingredients and boil until tender.
Now remove the lemon peel.
Add salt and pepper to taste.
Blend with hand blender until smooth.
A great recipe tip is to add 1/8-1/4 cup of fresh cream before serving.
